
Quick – what’s the one dish/food you’d take with you to a desert island?
Do you pick your favorite food? Or one with lots of variety that you wouldn’t get bored with eating every single day? Or one with lots of nutritional value that would make you feel good – well, as good as you can feel while stranded on a desert island?!
I would take chocolate. Katy would choose pizza. Several of my friends would choose bacon or peanut butter….but Becky would take today’s recipe Summer Scallops with Corn Soup (pg 91) which I found to be an interesting choice. While I liked the dish, I’m not sure it’s what I’d want to eat forever, so I asked her what the appeal was.
“I love this dish because I feel like it’s got it all going on – sweetness from the corn and scallop, a perfect summer tomato, good crackly bread, an herb and olive salad and then, just when it couldn’t get any better, a chile oil to cut through the sweetness and contrast with the yellow of the corn soup,” Becky explained. “It’s a pretty dish without just being a pretty face – it contains some of my most favorite summer foods in a combination I find addictive.”
Well, now I get it! She’s absolutely right on every count, and this soup is a no-brainer for summer when great fresh produce hits the scene. It has many steps that might scare some of you away (it’s a #4 difficulty) but if you can work a blender, have basic knife skills and aren’t afraid to plop juicy scallops into a pan of hot oil, you’ll be fine. Pour yourself a glass of Rose or white burgundy, head out to the picnic table and soak up the beauty of summer.

I think Becky is on to something. When we were in Edinburgh we found this little pizza joint and had a “Mexican” pizza that had a lot of these same component – minus the scallops, of course. The spiciness of the chiles with the sweetness of the corn, the fresh tomatoes and crispy crust – it was all just the perfect combination and we both ate every bite. So I guess I vote with Katy about the pizza since I haven’t yet tried the soup – but for all the same reasons Becky likes the soup!
(Though would you have a blender to make the soup on a deserted island?)

Your pizza sounds great and of course I know it was extra-delicious because it was enjoyed in a foreign country! Last but not least, good point on the blender…I’m sure Becky will appreciate that reminder LOL
